Glasgow city centre favourite The Spanish Butcher to open Galicia inspired restaurant in Edinburgh

RUSK & RUSK, the independent Glasgow restaurant group, has announced its award-winning dining concept, The Spanish Butcher, is opening in Edinburgh.

The Spanish Butcher, a Galicia and Brooklyn influenced restaurant proposition that started on Miller Street in Glasgow city centre, will arrive on North Castle Street in the capital in spring 2024.

A sister restaurant to The Butchershop Bar & Grill opposite the Kelvingrove Art Gallery, the arrival of The Spanish Butcher in Edinburgh will see the local hospitality group open a 90-cover restaurant promising vibrant Spanish and Mediterranean-inspired flavours across an à la carte menu, married with the best homegrown produce from Scotland’s larder.

Expect fresh seafood and select cuts of beef including their dry-aged prime rib of beef or porterhouse cuts from the Rubia Gallega breed of cattle native to the green pastures of Galicia in north-western Spain. Other delights include grilled Presa Iberico, 30-month aged Jamon Iberico de Bellota, whole roasted Shetland monkfish on the bone with chorizo and caperberries, grilled octopus or whole roasted suckling pig to share. Add Gordal olives, Padrón peppers and Manchego truffle fries.

Inspired by New York’s neighbourhood dining scene, The Spanish Butcher in Edinburgh will be quintessentially modern, hip and hospitable offering. The Spanish Butcher in Glasgow was the first Scottish restaurant to be nominated in the Best Restaurant in the UK category at the GQ Food & Drinks Awards and won the title of Scotland’s Most Stylish Restaurant in 2018. Diners have included Will Ferrell, Toby McGuire, Chris Pine, Gerard Butler, Sam Heughan and Paolo Nutini.
