Cyan restaurant hopes to open artisan bakery in Milngavie

Popular Milngavie restaurant and bar Cyan plans ‘to go continental’ by opening a french style ‘Artisan’ bakery shop at the back of their premises.

The owner, David Cowan, has applied to East Dunbartonshire Council for planning permission to sell home-made bread from the basement of the property on Stewart Street, in the lane, which is currently a garage.

He said: “I thought this would be a great way to utilise the space.

“Some of the bread baked in the premises will be used in the restaurant, the rest will be available to buy.

“We will offer something a bit different, hand-made yeast breads made with time and care.

“They will taste great and be healthier with less additives and preservatives.

“In France and Spain breads are a staple in their diet and they pride themselves on making great bread.

“Often they are used in salads and soups and for dipping into balsamic vinegar and olive oil.

“We’re sure that if the same quality produce was available here people would buy it.”

David also plans to open an evening takeaway pizzeria, offering a few named pizzas using unbleached flour from a Scottish mill. He added: “We plan to use sour dough which takes about 20 hours to prove and tastes fantastic.

“They will be a great alternative to mass produced pizzas, they will be healthier and delicious with no additives or salts.”

October 11 is the earliest that a decision could be made.
