THE smell of success mingled with that of freshly cut herbs as two Boclair Academy pupils won a Scotland-wide contest to create a tasty, nutritional meal.

Eilidh Gordon and Caragh Docherty, both 13 and in S2, were voted the winners in the Scotherbs Tesco Schools Project. with their mouthwatering dish of teamed salmon with pistachio basil butter, served in a herb infused tortilla pocket with a salad of rocket and fresh herb pesto dressing.

Caragh designed the recipe while Eilidh was the chef, and the girls won a cookery workshop for their year with Tesco Home Economist Donna Knight and £200 for their school which will be spent on new equipment for the home economics department.

Eilidh said: “We love cooking and we’ve really enjoyed doing this project with Miss Coote, our home economics teacher. Now that we’ve won, we’re even more enthusiastic. We hope lots of people try our recipe and find it as tasty as all our friends did!”

Caragh said: “This recipe is quite contemporary and meets many of the Scottish dietary targets. Salmon is an oily fish and when complemented with fresh herbs, we have a meal that is very nutritious, as well as delicious.

“We love the beautiful aroma from this dish and using herbs and spices with food is a healthy way to reduce salt in our diets. You could easily use chicken or vegetables instead of salmon in this recipe and additional cheese like mozzarella with this dish would be nice too.”

Fiona Lamotte, managing director of Scotherbs, said: “We’re delighted to have found so many enthusiastic young chefs in Scotland. As all our young contestants have demonstrated, cooking with fresh herbs adds so much more flavour to your recipes.

“Herbs are so easy to prepare, give you extra flavour, reduce the need for salt and contribute to your five-a-day. Well done to everybody who took part and especially to Eilidh and Caragh for coming up with the delicious winning dish.”

Gael Coote, home economics teacher at Boclair Academy, instils a passion for healthy cooking into all her pupils and is particularly interested in the nutritional value of herbs. The school also runs a popular after-school baking club.

She said: “This project really inspired our pupils. Eilidh and Caragh worked hard in their lunch breaks to perfect this dish. The result is a delicious blend of flavour and texture, and the infused fresh herbs are divine. Try it for a light family supper. You won’t be disappointed.”
